  • 2 or 3 chicken breasts, cut in half horizontally
  • 3 teaspoons paprika, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon instant chicken bouillon (optional)
  • 1 or 2 tablespoons lemon juice
  • 4 tablespoons melted unsalted butter
  • 2 tablespoons olive oil
  • 3/4 cup freshly grated parmesan
  • 1/2 teaspoon fresh cracked black pepper
  • 1 tablespoon minced garlic (or garlic powder)
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh chopped parsley, plus more for garnish
  • 1 teaspoon red chili pepper flakes (optional)

Instructions

1. Position a rack in the center of your oven and preheat to 400ºF (200°C).

2. Season chicken cutlets with salt, pepper, garlic powder, onion powder, lemon juice, instant chicken bouillon (if using), and 1 teaspoon of paprika. Arrange in a baking dish.

3. In a bowl, mix melted butter, olive oil, parmesan, pepper, minced garlic, 2 teaspoons of paprika, parsley, chili flakes (if using), and Italian seasoning. Pour over chicken, reserving some for serving if desired.

4. Bake for 15–20 minutes, or until the internal temperature reaches 165˚F (75°C).

5. Serve immediately with cauliflower rice, baked veggies, or your favorite side. Use reserved sauce for dipping. Enjoy!

Notes

Use a meat thermometer to ensure the chicken reaches 165°F internally.

You can substitute grated parmesan with shredded, but freshly grated melts better.

This dish pairs great with low-carb sides like zucchini noodles or mashed cauliflower.

For a spicier version, increase the red chili pepper flakes.
