Ingredients

Scale
  • 1 lb ground chicken
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 1/4 cup sweet soy sauce
  • 1 tablespoon Sriracha sauce (adjust for preferred spice)
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon red pepper flakes
  • 1/2 cup bell peppers, diced (any color)
  • 1/2 cup green onions, chopped
  • 1 tablespoon sesame seeds (for garnish)

Instructions

1. Gather all ingredients and chop the vegetables as needed.

2. In a large skillet, heat the vegetable oil over medium-high heat.

3. Add ground chicken to the skillet; cook until browned, breaking it up with a spoon, about 5-7 minutes.

4. Stir in minced garlic and ginger and cook for an additional 1-2 minutes until fragrant.

5. In a small bowl, combine sweet soy sauce, Sriracha, honey, rice vinegar, and red pepper flakes. Mix well.

6. Pour the sauce over the cooked chicken, stirring to coat evenly.

7. Stir in the diced bell peppers and cook for another 3-4 minutes until they are tender.

8. Once everything is combined and heated through, remove the skillet from the heat.

9. Sprinkle chopped green onions and sesame seeds over the dish for added flavor and presentation.

Notes

Adjust the level of Sriracha and red pepper flakes based on your heat preference.

Serve over steamed rice, cauliflower rice, or in lettuce cups for a low-carb option.

Use tamari instead of soy sauce for a gluten-free version.
