  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 medium potatoes, diced
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 4 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas

Instructions

1. In a large pot, heat olive oil over medium heat. Add ground beef and cook, breaking it apart with a spoon, until evenly browned, about 5–7 minutes. Drain any excess fat.

2. Add diced onion and minced garlic to the pot. Sauté for 3–4 minutes until the onion is translucent and garlic is fragrant.

3. Stir in sliced carrots, diced potatoes, diced tomatoes with juice, beef broth, Worcestershire sauce, thyme, oregano, salt, and pepper. Mix well.

4. Bring the mixture to a boil over high heat, then reduce to low. Cover and simmer for 30–40 minutes, stirring occasionally, until vegetables are tender.

5. Add frozen peas and cook for an additional 5 minutes.

6. Taste and adjust seasoning if needed. Serve hot.

This stew is flexible—swap in vegetables like corn or green beans if preferred.
