This Easy Hobo Casserole is a comforting and satisfying dish that layers ground beef, potatoes, creamy soups, and cheese for a delicious meal the whole family will love.

  • 1 pound ground beef
  • 1 cup diced onion
  • 1 tablespoon minced garlic
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 5 medium potatoes, thinly sliced
  • 1 can (10.7 oz) condensed cream of mushroom soup
  • 1 can (10.7 oz) condensed cream of chicken soup
  • 1 can (12 oz) evaporated milk
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese
  • Cooking spray

Instructions

1. Preheat the oven to 375ยฐF (190ยฐC) and spray a 9ร—13-inch baking dish with cooking spray.

2. In a large skillet, cook ground beef with diced onion and minced garlic until beef is browned. Drain excess fat. Season with salt and pepper.

3. In a mixing bowl, whisk together the condensed mushroom soup, condensed chicken soup, evaporated milk, and regular milk until smooth.

4. Layer half of the thinly sliced potatoes in the prepared baking dish.

5. Add half of the beef mixture over the potatoes.

6. Pour half of the soup mixture evenly over the beef layer.

7. Sprinkle half of the shredded cheddar cheese on top.

8. Repeat the layers with the remaining potatoes, beef mixture, soup mixture, and cheese.

9. Cover the dish with foil and bake for 1 hour.

10. Uncover and bake for an additional 30 minutes until the cheese is golden and bubbly.

11. Let the casserole rest for 10 minutes before serving.

Notes

You can slice the potatoes using a mandoline for even thickness. Add a sprinkle of paprika or parsley on top before serving for extra flavor and color. This dish is great for leftovers and reheats well.
