Quick and easy One-Pot Hamburger Vegetable Soup! Ready in 30 minutes on the stovetop or made in the slow cooker, it’s perfect for busy weeknights. Hearty, flavorful, and loaded with vegetables and lean ground beef.

  • 1 pound ground beef (93% lean)
  • ½ cup chopped yellow onion
  • 3 cloves garlic, minced
  • 28 oz canned diced tomatoes with juice
  • 3 cups frozen vegetables for soup (includes corn, peas, tomatoes, carrots, green beans, and potatoes)
  • 3 cups beef broth or stock
  • 15 oz can tomato sauce
  • 2 tsp Italian seasoning
  • 1 tsp Beef Better Than Bouillon
  • ¼ tsp kosher salt
  • ¼ tsp ground black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp red pepper flakes
  • 1 bay leaf
  • 2 tbsp fresh parsley, chopped

Instructions

1. In a large pot over medium heat, add the ground beef, onion, and minced garlic. Cook for 5 to 7 minutes or until the juices run clear.

2. Add the diced tomatoes, frozen vegetables, beef broth, tomato sauce, Italian seasoning, Beef Better Than Bouillon, salt, pepper, garlic powder, onion powder, red pepper flakes, and bay leaf.

3. Simmer for 20 minutes, stirring occasionally.

4. Remove the bay leaf.

5. Sprinkle chopped parsley on top before serving.

Notes

You can double or triple this recipe for a crowd.

This soup can also be made in a slow cooker: cook on low for 6 to 8 hours.

Set the slow cooker to warm to keep the soup hot before guests arrive.

Adjust seasonings to taste and add extra broth if a thinner consistency is desired.
