Easy cinnamon apple cake features soft, spiced cake filled with chunks of sweet apples and topped with a light glaze. It’s an excellent choice for dessert or a cozy afternoon treat.

  • 1 1/4 cups chopped apples (peeled, approximately 2 medium apples)
  • 1/4 cup softened butter
  • 1/4 cup sugar
  • 1/4 cup dark brown sugar
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup chopped walnuts

Instructions

1. Preheat the oven to 350°F (175°C). Prepare a 9-inch round baking pan with non-stick spray or butter.

2. In a large bowl, combine softened butter, granulated sugar, and dark brown sugar. Beat until light and fluffy, about 2-3 minutes.

3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.

4. In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.

5. Gradually mix dry ingredients into the butter mixture on low speed until just combined.

6. Fold in chopped apples and walnuts gently without overmixing.

7. Pour batter into the prepared pan and spread evenly.

8. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.

9. Let the cake cool in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

10. Slice and serve. Optional: Pair with vanilla ice cream or drizzle with caramel sauce.

Notes

Use sweet apple varieties like Honeycrisp or Gala for the best flavor. Store leftovers in an airtight container at room temperature for up to three days. This cake also freezes well if wrapped tightly.
