  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup Italian seasoned breadcrumbs
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ cup fresh basil, chopped
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

1. Preheat your oven to 375°F (190°C) and spray a large baking dish with nonstick cooking spray.

2. Cut chicken breasts into bite-sized pieces and season with salt, pepper, and garlic powder.

3. Layer half of the chicken in the baking dish, followed by half of the marinara sauce and half of the mozzarella cheese.

4. Repeat the layers with the remaining chicken, marinara sauce, and mozzarella cheese. Top with grated Parmesan.

5. Cover with aluminum foil and bake for 30 minutes. Remove foil in the last 10 minutes to brown the cheese.

6. Let cool slightly before garnishing with fresh basil and serving.

Notes

For extra crispiness, toast the breadcrumbs in a skillet with a bit of olive oil before adding to the casserole. You can also use rotisserie chicken for a quicker version.
