This Chicken Fajita Rice Casserole is a delicious meal that brings together all the flavors of classic fajitas in an easy, baked dish.   • 2 cups long-grain white or brown rice
  • 2 cups chicken broth
  • 1.5 lbs boneless skinless chicken breast or thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 packet or 2 tablespoons fajita seasoning
  • 1 cup shredded cheddar or Mexican blend cheese
  • ½ cup black beans (optional)
  • ½ cup corn (optional)
  • ½ cup diced tomatoes (optional)

Instructions

1. Heat a large skillet over medium heat.

2. Cook sliced onions and bell peppers until softened and fragrant.

3. Remove from heat and set aside.

4. Season chicken with fajita seasoning.

5. Sear in the same skillet for a few minutes on each side until browned.

6. Cut into bite-sized pieces.

7. Preheat oven to 375°F (190°C).

8. In a greased 9×13-inch baking dish, spread the uncooked rice evenly.

9. Add chicken broth, seasoned chicken, and sautéed veggies.

10. Stir to combine.

11. Cover with foil and bake for 35–40 minutes, or until the rice is tender and chicken is fully cooked.

12. Remove foil and sprinkle cheese over the top.

13. Bake uncovered for another 5–10 minutes, or until the cheese is melted and bubbly.

Notes

This casserole is easy to customize — add black beans, corn, or diced tomatoes for extra flavor and texture. You can also swap in leftover cooked rice to reduce baking time. Great for meal prep and freezer-friendly too!
