This easy California Roll Cucumber Salad is a fresh and creamy no-cook dish inspired by classic sushi flavors. Crisp cucumber is tossed with imitation crab, avocado, cream cheese, mayo, soy sauce, and sesame seeds for a quick and satisfying meal or snack.

Ingredients

  • 1 large cucumber, thinly sliced (about 1/8-inch thick)
  • 4 imitation crab sticks, chopped into bite-sized pieces
  • 1/2 avocado, cubed
  • 2 tablespoons cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1 1/2 tablespoons soy sauce
  • 2 teaspoons toasted sesame seeds

Instructions

1. Using a mandolin or sharp knife, slice the cucumber into thin 1/8-inch rounds and place them in a large bowl or container.

2. Add the chopped imitation crab, cubed avocado, softened cream cheese, mayonnaise, soy sauce, and toasted sesame seeds.

3. Cover the container with a secure lid and shake vigorously until everything is well combined and evenly coated. Alternatively, gently toss in a bowl until mixed.

4. Taste and adjust seasoning if desired, adding more soy sauce if needed.

5. Serve immediately for the freshest flavor, garnished with extra sesame seeds if desired.

Notes

English cucumbers work best since they have fewer seeds and a thinner skin.

For added spice, drizzle with sriracha or sprinkle with red pepper flakes.
