  • 4 boneless, skinless chicken breasts
  • 1 cup breadcrumbs (Panko recommended)
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup honey BBQ sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cooking spray or olive oil for baking
  • 2 pounds baby potatoes, halved
  • ½ cup sour cream
  • ¼ cup milk
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Pat chicken breasts dry and season with salt, pepper, garlic powder, and paprika.

3. Set up a dredging station with three bowls: one for flour, one for beaten eggs, and one for breadcrumbs.

4. Coat each chicken breast in flour, then eggs, then breadcrumbs, ensuring full coverage.

5. Place coated chicken on prepared baking sheet. Lightly spray with cooking spray or drizzle with olive oil.

6. Bake for 25–30 minutes until golden and cooked through.

7. In the last 5 minutes, brush chicken with honey BBQ sauce and return to oven to caramelize.

8. Meanwhile, bring a pot of water to a boil. Add halved baby potatoes and cook for 15–20 minutes until tender. Drain and set aside.

9. In a large bowl, mix sour cream, milk, Parmesan cheese, minced garlic, and butter until smooth.

10. Add cooked potatoes to the creamy mixture and gently fold to coat. Season with salt and pepper.

11. Transfer to a greased baking dish. Sprinkle with more Parmesan if desired.

12. Bake for 15–20 minutes until golden and bubbling.

13. Serve chicken and potatoes hot, garnished with fresh parsley if desired.

Notes

For extra crispy chicken, broil for 1–2 minutes after adding BBQ sauce.
