An easy comfort food family dinner you can make in your slow cooker. The chicken is so tender and cooked to perfection in a lemon garlic butter sauce that is out of this world delicious.

Ingredients

  • 1 ½ cups chicken broth
  • ¼ cup lemon juice
  • 3 boneless, skinless chicken breasts
  • 2 tbsp shallots, finely diced
  • 2 tbsp garlic, minced
  • ½ tsp paprika
  • ½ tsp crushed red chili pepper flakes
  • 2 tbsp Italian seasoning
  • ¼ cup butter, sliced
  • 2 to 4 rosemary sprigs
  • 2 tbsp cornstarch
  • ¼ cup water
  • Lemon slices, garnish
  • Salt and pepper to taste

Instructions

1. Pour chicken broth and lemon juice into the crockpot. Add the chicken breasts and shallots.

2. Sprinkle the chicken breasts with garlic, paprika, chili pepper flakes, and Italian seasoning.

3. Top the chicken breasts with sliced butter. Wedge the rosemary sprigs between the breasts.

4. Cook on high for 1 hour and then set on low for 3 hours.

5. 30 minutes before serving, mix the cornstarch and water together. Pour it into the crockpot around the chicken breasts.

6. Serve warm with lemon slices.

Notes

For a thicker sauce, you can increase the cornstarch mixture slightly.

Serve with mashed potatoes, rice, or crusty bread to soak up the flavorful sauce.

Leftovers can be stored in an airtight container in the fridge for up to 3 days.

Adjust spice level by reducing or omitting the red chili flakes.
