A melt-in-your-mouth beef roast slow-cooked with caramelized onions, herbs, and rich broth for the ultimate comforting meal.

For the Pot Roast:

  • 34 pounds beef chuck roast
  • 3 large yellow onions, thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 3 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour (for thickening)
  • 23 garlic cloves, minced
  • 1 bay leaf

Optional for Topping:

  • Gruyère or Swiss cheese slices
  • Fresh parsley for garnish

Instructions

1. Sear beef roast until golden on all sides.

2. Caramelize onions and garlic in the same pan.

3. Pour in broth, Worcestershire sauce, and thyme, then transfer to crockpot.

4. Cook on low for 8–9 hours until tender.

5. Thicken gravy, top with cheese, and serve warm.

Notes

For a deeper flavor, deglaze the pan with a splash of red wine before adding to the crockpot.

You can toast slices of baguette with melted Gruyère or Swiss cheese and serve them on top for a French onion soup-style finish.

Leftovers make excellent sandwiches or can be shredded for use in pasta or wraps.

If you prefer a thicker gravy, mix an extra tablespoon of flour with cold water and stir into the crockpot during the last 30 minutes of cooking.
