This slow cooker chicken fajitas recipe only has 5 ingredients! Quick and tasty, you can serve these fajitas with your favorite accompaniments. Low-carb, paleo, whole30 compliant, this easy chicken recipe can also be cooked in the Instant Pot.

  • 2 pounds boneless, skinless chicken breasts, sliced into thin strips
  • 3 large bell peppers, sliced
  • 1 large onion or 2 small onions, sliced
  • 15 ounces diced tomatoes or salsa
  • 1/3 cup fajita seasonings (see below for homemade blend)
  • Salt & pepper to season the chicken
  • 3/4 cup low-sodium chicken broth (for Instant Pot only)
  • Homemade Fajita Seasoning:
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 1/2 teaspoons salt (or more)
  • 1 1/2 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon pepper

Instructions

1. Season the chicken with salt & pepper. Add the chicken and all the other ingredients to the slow cooker. Stir to mix well.

2. Cook on HIGH for 2–3 hours or on LOW for 4–6 hours.

3. For Instant Pot: Turn the Instant Pot to sauté. Once hot, add the oil, onion, and bell pepper and cook 3–5 minutes or until soft.

4. Season the chicken with salt & pepper. Add the seasoned chicken, broth, diced tomatoes, and all the other seasonings to the pot. Stir to mix well.

5. Close lid and seal valve. Set high pressure and cook 8 minutes. When cooking time is complete, quick release pressure.

Notes

Do not let this sit on the WARM setting; the chicken will overcook and dry out.
