Ingredients

  • 1 cup elbow macaroni
  • 1 lb ground beef or turkey
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) chili beans, drained and rinsed
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 2 cups low-sodium chicken broth
  • Bell peppers (optional, diced)

Instructions

1. Chop onion, garlic, and bell peppers (if using). Measure all ingredients.

2. In a skillet over medium heat, sauté onions and garlic until translucent, about 3–4 minutes.

3. Add ground meat to the skillet and cook until browned, about 5–7 minutes.

4. Transfer the meat mixture to a crock pot.

5. Add elbow macaroni, diced tomatoes (with juices), chili beans, chicken broth, chili powder, cumin, and bell peppers. Stir well to combine.

6. Cook on LOW for 4–6 hours or HIGH for 2–3 hours, stirring occasionally.

7. About 15 minutes before serving, stir in shredded cheddar cheese until fully melted.

Notes

For added protein, swap ground beef for turkey or incorporate black beans. Adjust spice levels by varying chili powder or adding jalapeños. Leftovers can be stored in an airtight container in the fridge for up to three days; reheat on the stovetop with a splash of milk.
