A quick and cheesy one-skillet dinner starring crispy pierogies, sautéed broccoli, and a rich cheddar cheese sauce, finished with a crunchy baked topping.

  • 1 box Mrs. T’s 4 Cheese Medley Pierogies
  • 2 tablespoons unsalted butter
  • ½ tablespoon flour
  • 1 teaspoon salt, divided
  • 1 cup heavy cream
  • 6 ounces shredded cheddar cheese, divided
  • 2 tablespoons olive oil
  • 1 small head broccoli, chopped
  • ¼ cup panko breadcrumbs

Instructions

1. Preheat oven to 375°F.

2. Melt butter in a small saucepan over medium heat. Stir in flour and ½ teaspoon salt.

3. Whisk constantly for 2-3 minutes, until the mixture starts to bubble and brown.

4. Add heavy cream and continue stirring constantly for 3 minutes, until the sauce thickens.

5. Add 4 ounces of shredded cheddar cheese to the sauce and stir until melted and fully combined.

6. In a cast iron skillet over medium heat, add olive oil, broccoli, and remaining ½ teaspoon salt. Sauté for 3 minutes.

7. Add the pierogies to the skillet and sauté for an additional 5 minutes.

8. Pour cheese sauce over the pierogies and broccoli. Top with remaining 2 ounces of shredded cheddar and panko breadcrumbs.

9. Transfer the skillet to the oven and bake for 10-15 minutes, until the top is crispy and golden brown.

Notes

This skillet meal is a great way to elevate frozen pierogies into a comforting dinner. For added crunch, broil for 1-2 minutes at the end. You can swap the broccoli for cauliflower or add cooked bacon for a heartier version.
