Creamy Tuscan Chicken Soup is the ultimate cozy dish that warms both the heart and the stomach. This rich, hearty soup combines tender chicken, vibrant vegetables, and a luscious cream sauce infused with Italian flavors. Ingredients

  • Olive oil
  • Boneless skinless chicken breasts or thighs
  • Italian seasoning
  • Salt and pepper, to taste
  • Diced carrots
  • Diced celery
  • Diced onions
  • Sundried tomatoes
  • Garlic cloves
  • Flour
  • Chicken broth
  • Pasta (small shells recommended)
  • Heavy whipping cream
  • Grated Parmesan cheese
  • Fresh spinach

Instructions

1. Heat olive oil in a large pot over medium-high heat. Add diced chicken and season with Italian seasoning, salt, and pepper. Cook until browned, about 4-5 minutes.

2. Add onions, carrots, celery, sundried tomatoes, and garlic; sauté until vegetables are translucent, 3-4 minutes.

3. Sprinkle flour over the mixture and stir well. If using tomato paste, add it now.

4. Gradually whisk in chicken broth while stirring to avoid lumps.

5. Bring to a boil; add pasta and simmer for about 20 minutes until cooked through.

6. Stir in heavy cream, spinach, and Parmesan cheese; simmer for another 5 minutes.

7. Adjust seasoning to taste before serving. Serve hot, ideally with crusty bread.

Notes

Small shell pasta works well in this soup, but any small pasta shape will do.

For extra flavor, try adding a tablespoon of tomato paste with the sautéed vegetables.

This soup stores well in the fridge for up to 3 days; reheat gently before serving.

You can substitute half and half for a lighter version.
