  • 1 pound ground chicken
  • 1 medium onion, chopped

  • 1 cup whole milk
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon black pepper
  • 1⁄2 cup grated Parmesan cheese
  • 1⁄2 cup shredded mozzarella cheese
  • 2 cups fresh spinach, chopped
  • 1 medium carrot, diced
  • 1 celery stalk, diced
  • 1⁄2 teaspoon red pepper flakes (optional)

Instructions

1. Heat the olive oil in a large pot or Dutch oven over medium heat.

2. Add the ground chicken to the pot and cook, breaking it apart with a spoon, until browned and cooked through, about 5–7 minutes.

3. Remove the cooked chicken from the pot and set it aside.

4. In the same pot, add the chopped onion and sauté for about 3–4 minutes until softened.

5. Add the minced garlic to the pot and sauté for another 1–2 minutes until fragrant.

6. Return the cooked ground chicken to the pot and stir to combine with the onions and garlic.

7. Pour in the chicken broth, stirring well to incorporate.

8. Add the heavy cream and whole milk to the pot and stir until fully combined.

9. Sprinkle in the dried basil, dried oregano, salt, black pepper, and red pepper flakes (if using), and stir to season the soup.

10. Bring the soup to a simmer over medium heat and cook for 10–15 minutes to allow the flavors to meld.

11. Add the grated Parmesan cheese and stir until melted.

12. Add the shredded mozzarella cheese and stir until melted and the soup is creamy.

13. Stir in the chopped spinach, diced carrot, and diced celery, and cook for an additional 5–7 minutes until the vegetables are tender.

14. Taste the soup and adjust seasoning if needed with additional salt, pepper, or red pepper flakes.

15. Ladle the soup into bowls and serve immediately.
