1 medium onion, diced

2 celery stalks, diced

1 tsp salt

4 cups chicken broth
2 cups cooked chicken, shredded
1 cup heavy cream
1 lb potato gnocchi
2 cups fresh spinach
1/2 cup grated Parmesan cheese
1. Heat olive oil in a large pot over medium heat. Sauté diced onion until translucent, about 3 minutes.
