A quick and comforting dinner of tender chicken pieces and buttery egg noodles tossed in garlic and herbs—ready in under 30 minutes!

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz egg noodles (or your favorite pasta)
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter, divided
  • 2 cloves garlic, minced
  • Salt and black pepper, to taste
  • 1 teaspoon dried Italian seasoning (or a mix of dried basil and parsley)
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

1. In a large pot, cook the egg noodles according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat the olive oil over medium heat. Season the chicken pieces with salt and pepper, then add them to the skillet. Cook for 5–7 minutes, or until golden and cooked through. Remove the chicken from the skillet and set aside.

3. In the same skillet, melt 2 tablespoons of butter over medium heat. Add the garlic and Italian seasoning, cooking for 1–2 minutes until fragrant.

4. Add the drained noodles and remaining 1 tablespoon of butter to the skillet. Toss to coat the noodles in the butter sauce, then add the chicken back to the skillet. Sprinkle with Parmesan if desired, and garnish with fresh parsley. Serve warm and enjoy!

Notes

You can substitute egg noodles with spaghetti or any short pasta you prefer.

For extra richness, add a splash of cream or a few tablespoons of reserved pasta water when tossing the noodles.

This recipe is kid-friendly and pairs well with a side salad or steamed vegetables.
