Chicken Scampi with Garlic Parmesan Rice is a hearty and flavorful meal featuring golden-seared chicken in a lemony garlic butter sauce served over creamy Parmesan-infused rice. Easy enough for weeknights yet elegant enough to impress.

  • 2 large chicken breasts
  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided
  • 3 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1/3 cup dry white wine or chicken broth
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste
  • 1 tablespoon chopped fresh parsley
  • 2 garlic cloves, minced (for rice)
  • 2 tablespoons finely minced onion
  • 1 cup long grain white rice
  • 2 1/4 cups chicken broth
  • 1/2 cup grated Parmesan cheese

Instructions

1. Pat the chicken breasts dry and season with salt, black pepper, and crushed red pepper flakes. Pound slightly for even thickness.

2. Heat olive oil and 1 tablespoon butter in a skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden and cooked through. Remove and keep warm.

3. In the same pan, reduce heat to medium and add remaining butter and minced garlic. Sauté for about 30 seconds, then add wine or broth and simmer 2–3 minutes. Stir in lemon juice and parsley and simmer 1 more minute.

4. In a separate saucepan, melt butter and sauté garlic and onion until softened. Add rice and stir for 1 minute. Pour in chicken broth, bring to a boil, then cover and simmer for about 18 minutes until rice is tender.

5. Stir grated Parmesan into the cooked rice until creamy and well combined.

6. Slice the chicken and serve over the garlic Parmesan rice. Drizzle with the scampi sauce and garnish with additional parsley. Serve hot.

Notes

Let the chicken rest for 5 minutes before slicing to keep it juicy.

For extra creaminess, stir 1–2 tablespoons of heavy cream into the rice with the Parmesan.

You can substitute jasmine rice or orzo for a slightly different texture.

Use freshly grated Parmesan for the best flavor and smoothest consistency.
