Chicken Hashbrown Casserole is a warm, comforting dish that blends tender chicken, crispy potatoes, and creamy sauce into one easy meal. Perfect for family dinners or gatherings, it’s a crowd-pleaser that fills the house with a savory aroma.

  • 3 cups frozen hash browns, thawed slightly (about 8 ounces)
  • 2-3 cups cooked chicken, cut into bite-size pieces
  • 1/4 cup bacon bits or crumbled cooked bacon
  • 1 cup cheddar cheese, shredded (for casserole)
  • 10.5 oz cream of chicken soup, condensed
  • 1/2 cup milk
  • 12 oz frozen mixed vegetables, thawed slightly
  • 1/8 tsp dried thyme
  • 12-14 Ritz crackers, crushed
  • 1/2 cup cheddar cheese, shredded (for topping)

Instructions

1. Preheat oven to 400°F.

2. In a large mixing bowl, combine thawed hash browns, cooked chicken, bacon bits, 1 cup cheddar cheese, thawed vegetables, cream of chicken soup, milk, and thyme. Stir until well coated.

3. Grease a 7×11-inch baking dish with cooking spray or oil.

4. Spread mixture evenly into prepared dish.

5. In a small bowl, mix crushed Ritz crackers with remaining 1/2 cup cheddar cheese.

6. Sprinkle cracker and cheese topping over casserole.

7. Cover with foil and bake for 30 minutes.

8. Remove foil and bake an additional 15 minutes, until top is golden and bubbling.

9. Let casserole rest 10–15 minutes before serving.
