Chicken Caesar Sandwiches feature crispy, well-seasoned chicken cutlets layered with creamy Caesar salad and Parmesan cheese on garlic butterโ€“toasted bread for a hearty, flavor-packed meal.

FOR THE CHICKEN CUTLETS:

  • 2 chicken breasts
  • 1 egg, whisked with a splash of milk
  • 1/4 teaspoon each garlic powder, salt, and pepper
  • 1/2 cup breadcrumbs
  • 1/2 cup Panko breadcrumbs
  • Vegetable oil, for frying

FOR THE GARLIC BUTTER:

  • 4 tablespoons salted butter, slightly melted
  • 2 tablespoons mayonnaise
  • 2 to 3 cloves garlic, minced
  • 2 to 3 tablespoons chopped fresh parsley
  • 1/4 cup finely grated Parmesan cheese

FOR THE CAESAR DRESSING:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup finely grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon anchovy paste
  • 1 teaspoon Worcestershire sauce
  • 1 clove garlic, grated
  • Salt and pepper, to taste

TO ASSEMBLE:

  • 4 hoagies or baguettes
  • 3 to 4 cups romaine lettuce, chopped or shredded

Instructions

1. Slice the chicken breasts horizontally into 4 to 6 thin cutlets. In one bowl, whisk together the egg, milk, garlic powder, salt, and pepper. In another bowl, combine the breadcrumbs and Panko.

2. Dip each chicken cutlet into the egg mixture, then coat in the breadcrumb mixture. Fry in a shallow pan with about 1 inch of vegetable oil over medium-high heat for about 5 minutes, until golden brown and crispy. Transfer to a paper towel-lined plate.

3. In a small bowl, mix together the melted butter, mayonnaise, garlic, parsley, and Parmesan for the garlic butter. Split the bread lengthwise and spread garlic butter on the inside of each half. Toast in a 450ยฐF oven or under the broiler for 3 to 4 minutes.

4. Whisk together all Caesar dressing ingredients in a bowl or jar until smooth. In a large bowl, toss the chopped romaine with 3 to 4 tablespoons of the dressing.

5. To assemble, layer crispy chicken cutlets on the toasted bread, top with dressed romaine, and finish with extra grated Parmesan. Serve immediately.

Notes

For extra crunch, add additional Parmesan or freshly cracked black pepper before serving.
