  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade taco seasoning)
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn kernels, drained
  • 2 cups beef broth
  • 1 cup heavy cream
  • 8 oz cream cheese, softened and cubed
  • 1 1/2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • Optional toppings: sour cream, cilantro, sliced jalapeños, tortilla chips

Instructions

1. In a large pot or Dutch oven, heat a little oil over medium heat. Add ground beef and cook until browned, breaking it up as it cooks (5–7 minutes).

2. Drain excess fat and add the chopped onion. Sauté for 3–4 minutes until softened.

3. Stir in minced garlic and cook for an additional 30 seconds.

4. Add taco seasoning and mix until evenly coated.

5. Stir in diced tomatoes with green chilies, black beans, corn, and beef broth. Mix well.

6. Bring to a boil, then reduce heat and simmer for 10–15 minutes.

7. Stir in heavy cream and cubed cream cheese, letting it melt fully into the soup.

8. Add shredded cheddar cheese and stir until melted and combined.

9. Season with salt and pepper to taste. Add cayenne or jalapeños for extra spice if desired.

10. Ladle into bowls and top with sour cream, cilantro, jalapeños, or tortilla chips as desired.

Notes

If you prefer a thicker soup, reduce the broth or simmer longer.

For a lighter version, substitute heavy cream with half-and-half or milk.

Add extra jalapeños or chili powder to increase the heat.
