  • 2 cups uncooked long-grain white rice
  • 3 cups low-sodium chicken broth
  • 1 cup milk
  • 2 cups cooked shredded chicken breast
  • 4 cups fresh broccoli florets, chopped into bite-sized pieces
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • Chopped fresh parsley (optional, for garnish)

Instructions

1. Preheat oven to 375°F (190°C) and rinse rice under cold water until clear, then drain well.

2. Spread rinsed rice evenly in a 9×13-inch baking dish. Add chicken broth and milk, then stir in garlic powder, onion powder, salt, pepper, and ½ cup shredded cheese.

3. Scatter shredded chicken and broccoli evenly over the rice mixture without stirring.

4. Cover tightly with aluminum foil and bake for 30 minutes.

5. Remove foil, gently stir the mixture, then sprinkle remaining cheese on top.

6. Bake uncovered for an additional 15 minutes until cheese is melted and bubbly.

7. Let rest for 5 minutes before serving and garnish with parsley if desired.

Notes

Rinsing the rice removes excess starch and prevents a gummy texture.

Ensure the dish is tightly covered to trap steam and cook the rice evenly.
