Roasted cauliflower steaks topped with garlicky mushrooms and melted mozzarella cheese. This hearty vegetarian dish is flavorful, comforting, and perfect as a satisfying main or side.

Ingredients

  • 1 large cauliflower head, sliced into 3/4-inch thick steaks
  • Ghee or avocado oil cooking spray
  • 1 tablespoon avocado oil or olive oil
  • 1 tablespoon dry Italian seasoning
  • 8 oz fresh button mushrooms, sliced
  • 2 fresh garlic cloves, minced
  • 1 cup shredded mozzarella cheese
  • Sea salt and fresh ground black pepper, to taste
  • Fresh thyme, for garnish

Instructions

1. Preheat your oven to 400ยฐF (200ยฐC) and spray baking sheets with cooking oil.

2. Place the cauliflower slices onto a large baking sheet with plenty of space between them so they do not overlap. Use two sheets if necessary.

3. Brush both sides of each cauliflower steak with avocado oil or olive oil, then season with sea salt, black pepper, and Italian seasoning.

4. Roast for 20โ€“25 minutes until golden brown on the edges, flipping once halfway through cooking.

5. In a mixing bowl combine sliced mushrooms, minced garlic, and a pinch of sea salt and pepper, tossing well to coat.

6. Spread the mushroom mixture on another baking sheet sprayed with oil and bake for 10โ€“15 minutes, or sautรฉ in a pan with 1 teaspoon oil over medium-high heat for 5โ€“6 minutes until tender.

7. Remove the cauliflower and mushrooms from the oven.

8. Sprinkle mozzarella cheese over the roasted cauliflower steaks and top with the mushroom and garlic mixture.

9. Return to the oven for 2โ€“3 minutes until the cheese is melted and bubbly.

10. Garnish with fresh thyme and serve warm.

Notes

Cut the cauliflower carefully through the stem to keep the steaks intact.

If smaller florets break off, roast them alongside the steaks for extra crispy bites.

Try adding grated Parmesan or provolone for extra cheesy flavor.

These pair well with a fresh green salad, quinoa, or roasted potatoes.
