Burrito casserole is a deliciously layered dish that combines seasoned beef, black beans, and melty cheese for a comforting family meal in one pan.

Ingredients

  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 6 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium onion, chopped
  • 2 tbsp taco seasoning
  • Sour cream for serving (optional)

Instructions

1. Preheat your oven to 350°F (175°C).

2. In a large skillet over medium heat, sauté the chopped onion and bell peppers until softened (about 5 minutes).

3. Add the ground beef to the skillet and cook until browned, breaking it apart as you go. Drain excess fat if needed.

4. Stir in the black beans, salsa, and taco seasoning. Let simmer for 3-5 minutes.

5. In a baking dish, layer tortillas at the bottom followed by half of the beef mixture and one cup of cheese. Repeat layers with remaining ingredients.

6. Cover with foil and bake for 25 minutes; remove foil for the last 10 minutes to let cheese bubble up.

Notes

Customize your casserole using pinto beans instead of black beans or adding extra veggies like corn or zucchini.

For a spicier kick, include diced jalapeños between the layers.
