A simple and flavorful baked chicken fajita casserole with tender chicken, bell peppers, and onions, all seasoned with classic fajita spices and topped with melted cheese.
1. Preheat oven to 375°F (190°C).
2. In a large bowl, mix chicken, bell peppers, and onions.
3. Add olive oil, chili powder, cumin, garlic powder, paprika, salt, and black pepper. Toss to coat.
4. Spread mixture in a greased 9×13-inch baking dish.
5. Bake for 25 minutes.
6. Sprinkle shredded cheese on top and bake for 5 more minutes.
7. Garnish with fresh cilantro before serving.
For spicier fajitas, add 1/2 tsp cayenne pepper.
