  • 3 cups Cilantro Lime Rice (or cooked rice)
  • 3 cups Instant Pot Carnitas (1.5 lbs Mexican flavored meat of your choice)
  • 1 1/2 cups Pico de Gallo (or salsa of your choice)
  • 2 avocados (or 1 recipe Best Guacamole)
  • 4 cups Fajita Veggies (about 2/3 cup per serving)
  • Optional toppings:
  • Black beans or pinto beans
  • Corn
  • Sour cream
  • Grated cheese

Instructions

1. Start by preparing each of the different components for the burrito bowls: carnitas, cilantro lime rice, fajita veggies, pico de gallo, and guacamole.

2. To serve family-style, arrange each component in separate bowls so everyone can build their own burrito bowl.

3. To assemble a single burrito bowl, add shredded lettuce and a scoop of cilantro lime rice to the base.

4. Top with carnitas, fajita veggies, and your choice of beans, corn, cheese, and sour cream.

5. Finish with a generous spoonful of pico de gallo and a dollop of guacamole.

6. Serve immediately and enjoy!

Notes

This recipe uses components that may take up to an hour to prepare if made from scratch. Using an Instant Pot for both the carnitas and rice helps speed things up.
