Cajun Sausage Pasta: Easy & Amazing One-Pan Dinner

This Cajun sausage pasta is bold, hearty, and packed with spicy, creamy, and savory flavors. Made in one skillet, it’s an easy and satisfying weeknight dinner the whole family will love.

Ingredients

  • 1 pound andouille sausage, sliced into 1/4-inch rounds
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 (14.5 ounce) can diced fire-roasted tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 12 ounces penne pasta
  • 4 ounces cream cheese, cubed and softened
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

1. Heat olive oil in a large skillet over medium-high heat. Add sliced sausage and cook until browned, about 5 minutes. Remove with a slotted spoon and set aside.

2. Add diced onion and bell pepper to the same skillet and sauté until softened, about 5 minutes. Stir in minced garlic and cook for 1 minute until fragrant.

3. Pour in diced tomatoes, chicken broth, heavy cream, and Cajun seasoning. Stir well and bring to a boil.

4. Add the uncooked penne pasta to the skillet. Reduce heat to medium-low, cover, and simmer for 12–15 minutes, or until pasta is al dente.

5. Uncover and stir in cream cheese and Parmesan cheese until melted and the sauce becomes smooth and creamy.

6. Return the cooked sausage to the skillet and stir to combine. Garnish with chopped parsley before serving.

Notes

For extra heat, add a pinch of red pepper flakes or use spicy Cajun seasoning.

If the sauce thickens too much, stir in a splash of chicken broth to loosen it.

You can substitute smoked sausage if andouille is unavailable.

Serve with garlic bread or a simple green salad for a complete meal.
