Bruschetta Chicken Pasta is a fresh and flavorful Italian-inspired dish featuring juicy seasoned chicken, ripe tomatoes, fragrant basil, and perfectly cooked pasta. This bright yet comforting meal comes together in just 30 minutes and is perfect for an easy weeknight dinner.

For the Bruschetta Topping:

  • 2 cups (300g) cherry or Roma tomatoes, diced
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • ยฝ teaspoon salt
  • ยผ teaspoon black pepper
  • ยฝ teaspoon Italian seasoning
  • ยผ cup fresh basil, chopped

For the Chicken & Pasta:

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper
  • ยฝ teaspoon garlic powder
  • ยฝ teaspoon paprika
  • 1 tablespoon olive oil
  • 8 oz (225g) penne or spaghetti pasta
  • ยฝ cup grated Parmesan cheese
  • ยผ teaspoon red pepper flakes (optional)

Instructions

1. In a bowl, combine diced tomatoes, minced garlic, balsamic vinegar, olive oil, salt, black pepper, Italian seasoning, and fresh basil. Let it sit for 10 minutes to allow the flavors to blend.

2. Season the chicken breasts with salt, black pepper, garlic powder, and paprika.

3. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 4โ€“5 minutes per side until golden brown and fully cooked. Remove from the skillet and let rest for 5 minutes before slicing.

4. While the chicken cooks, bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and toss with a drizzle of olive oil to prevent sticking.

5. Add the cooked pasta to the skillet with any remaining chicken juices. Toss with the bruschetta topping and sliced chicken until well combined.

6. Sprinkle with grated Parmesan and red pepper flakes. Serve warm with extra basil and Parmesan for garnish.
