  • 8 oz rotini pasta
  • 1 cup cherry tomatoes, halved
  • 6 slices bacon, cooked and crumbled
  • 2 cups romaine lettuce, chopped
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste
  • 2 tbsp chives or green onions, chopped

Instructions

1. Cook rotini pasta in salted boiling water until al dente; drain and rinse with cold water.

2. While pasta cooks, fry bacon in a skillet over medium heat until crispy; drain on paper towels.

3. In a large bowl, combine cooked pasta, crumbled bacon, cherry tomatoes, and chopped lettuce.

4. In a separate bowl, whisk together mayonnaise, Dijon mustard, salt, and pepper.
