Ingredients

1 cup orzo pasta
1 lb (450g) shrimp, peeled and deveined
4 cloves garlic, minced
1 cup (240ml) chicken broth
2 tbsp olive oil
Zest and juice of 1 lemon
2 tbsp chopped fresh parsley
Salt to taste
1/4 tsp red pepper flakes (optional)

Instructions

Heat 1 tbsp olive oil in a large skillet or pot over medium heat
Add orzo pasta and toast slightly, stirring frequently for 1-2 minutes
Add garlic and sauté until fragrant
Pour in chicken broth and bring to a boil
Cover, reduce heat to low, and let simmer for 12-14 minutes until orzo is just al dente
Stir in shrimp, lemon zest, juice, remaining 1 tbsp oil, and parsley
Cover and cook 2-3 minutes until shrimp are pink and opaque
Season with salt and red pepper flakes

Notes
