Garlic Parmesan Chicken Meatloaf is a deliciously modern twist on a classic comfort food. This moist and flavorful meatloaf features lean ground chicken, aromatic roasted garlic, and rich Parmesan cheese, creating an inviting dish perfect for family dinners or impressing guests.

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tablespoons soy sauce (low-sodium recommended)
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

1. Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick spray.

2. Sauté diced onions in a skillet over medium heat until soft, about 5 minutes.

3. In a large bowl, mix together ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, black pepper, and half of the Parmesan cheese until fully combined.

4. Shape the mixture into a loaf form in the greased baking dish.

5. Sprinkle the remaining Parmesan cheese evenly over the top. Optionally add paprika or Italian seasoning for extra flavor.

6. Bake for 45–50 minutes or until the internal temperature reaches 165°F (74°C).
