Crispy roasted potatoes tossed with creamy baked feta, roasted garlic, herbs, lemon, and a drizzle of honey for a rich and flavorful side dish inspired by the viral baked feta trend.

  • 2 large baking potatoes
  • 1 block feta (200 g)
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon red chili flakes
  • 1 head garlic, top cut off
  • 1 lemon, halved
  • 1 tablespoon honey
  • 1/4 cup fresh basil, chopped

Instructions

1. Preheat oven to 200ยฐC (390ยฐF).

2. Wash and cube the potatoes. Add them to a saucepan, cover with water, and bring to a boil. Par-boil the potatoes for 6โ€“8 minutes, then drain and allow them to steam dry for 2โ€“3 minutes.

3. Transfer potatoes to a baking dish. Add thyme, oregano, salt, pepper, and olive oil and toss until evenly coated.

4. Drizzle the garlic head with a little olive oil, wrap in foil, and place it in the baking dish with the potatoes.

5. Roast the potatoes and garlic for 30โ€“40 minutes until the potatoes are golden, crispy, and almost cooked through.

6. Remove the tray from the oven and take out the garlic. Place the feta block in the center of the tray and squeeze juice from half the lemon over it.

7. Return the dish to the oven and bake for another 15 minutes until the feta is soft.

8. Once the garlic is cool enough to handle, squeeze the roasted cloves from the skins and mash them with a knife.

9. Add the mashed garlic and juice from the remaining half lemon to the potatoes and gently stir to combine with the baked feta.

10. Mix in the fresh basil, drizzle with honey, sprinkle with red chili flakes, and serve.

Notes

Par-boiling the potatoes before roasting helps create extra crispy edges while ensuring the inside stays soft.

Adding the feta later prevents it from becoming rubbery and keeps it creamy and melty.

Roasted garlic adds deep flavor, but if you prefer a milder version you can substitute with 1โ€“2 teaspoons roasted garlic or add minced garlic when adding the feta.
