  • 1.5 pounds boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 cups apples, cored and sliced (about 2 medium apples)
  • ¼ cup maple syrup
  • ½ cup chicken broth
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice (optional for added brightness)
  • 1 sprig fresh thyme (optional for garnish)

Instructions

1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and black pepper.

2. Add the chicken to the skillet and cook for about 5-6 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

3. In the same skillet, add the sliced apples, and sauté for 2-3 minutes until they begin to soften.

4. Pour in the maple syrup, chicken broth, and add the cinnamon. Stir to combine and let it bubble for about 2 minutes.

5. Return the chicken to the skillet, nestling it among the apples. Cook for an additional 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

6. If desired, drizzle the lemon juice over the chicken just before serving for added brightness.

7. Garnish with fresh thyme sprigs if using, and serve warm on a platter.
