This Apple Feta Spinach Salad is crunchy, sweet, and tangy with a homemade maple vinaigrette. Quick to prepare and always a crowd favorite, it’s a perfect salad for any occasion.

Ingredients

  • 5 ounces fresh spinach or spring greens mix
  • 2 small apples, cored and thinly sliced
  • ¼ of a red onion, thinly sliced (about ½ cup)
  • 1/2 cup pecan halves, toasted
  • ⅔ cup feta crumbles
  • ½ cup dried cranberries
  • For the Dressing:
  • 2 tablespoons vegetable oil
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons maple syrup
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon garlic powder
  • A generous pinch of salt and black pepper

Instructions

1. Optional: Soak red onion slices in an ice water bath for 10 minutes to mellow the flavor. Pat dry with paper towels.

2. In a large serving bowl, combine spinach, apples, red onion, toasted pecans, feta cheese, and cranberries.

3. Add all dressing ingredients (oil, vinegar, maple syrup, mustard, garlic powder, salt, and pepper) to a mason jar. Seal and shake well to combine.

4. Pour the dressing over the salad and toss to coat evenly.

5. Serve immediately or refrigerate dressing separately to combine later.

Notes

To prep in advance, keep the dressing and salad components separate and toss together just before serving.

Use any variety of crisp apples such as Honeycrisp or Fuji for the best texture and flavor.

Toast pecans in a dry skillet over medium heat for 2–3 minutes until fragrant.

You can substitute goat cheese or blue cheese for feta if preferred.
