This easy, no-fuss chicken and rice casserole is the perfect comfort food! The name comes from how simple it is—you mix everything, pop it in the oven, and “forget” about it while it bakes to creamy, flavorful perfection. Perfect for busy weeknights!

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups Minute rice
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can water (use one of the soup cans for measurement)
  • 1 envelope Lipton onion soup mix
  • 1 tbsp butter

Instructions

1. Preheat your oven to 350°F (175°C).

2. Lightly grease a 9×13-inch casserole dish with butter to prevent sticking.

3. In a medium-sized bowl, combine the cream of mushroom soup, cream of chicken soup, Minute rice, and water. Stir until well mixed.

4. Pour the rice and soup mixture into the greased casserole dish and spread it evenly.

5. Lay the chicken breasts on top of the rice mixture, spacing them evenly.

6. Sprinkle the Lipton onion soup mix evenly over the chicken breasts.

7. Cover the dish tightly with aluminum foil and bake for 45–50 minutes, or until the chicken is fully cooked and the rice is tender.

8. Remove from the oven and let the casserole sit for a few minutes before serving.

9. Serve hot and enjoy!

Notes

You can substitute brown rice for a heartier dish, but adjust the baking time accordingly.

Add broccoli or peas before baking to include extra veggies.

For a cheesy version, sprinkle shredded cheddar cheese on top during the last 10 minutes of baking.

This dish is great for meal prepping or feeding a crowd.

Use reduced-sodium soups if you’re watching salt intake.
