Ingredients

Scale
  • 3 ounces Chocolate, in pieces
  • 4 Tablespoons Unsalted butter

  • 1 large Egg white
  • 1/3 cup Granulated sugar
  • 1/4 cup All-purpose flour
  • 1 teaspoon Confectioner’s sugar

Instructions

1. Prepare two 6-ounce ramekins with nonstick cooking spray and set aside.

2. Combine the butter and chocolate in a medium microwave-safe bowl.

3. Melt the chocolate and butter for 60-90 seconds, stirring in 30-second intervals until they are fully melted and combined.

4. In a separate bowl whisk the egg white, eggs, and sugar until the mixture becomes frothy.

5. Carefully pour the egg mixture and sugar mixture into the butter and chocolate mixture and mix them together.

6. Use a spatula and combine the flour with the chocolate batter. Mix until just combined. Do not overmix.

7. Pour the batter into the prepared ramekins.

8. Air fry the molten lava cakes at 370 degrees F for 8-10 minutes. Keep a close eye on them during the cooking process so they don’t overcook.

9. Cook until the tops of the lava cakes have popped up and have crispy edges.

10. Allow the ramekins to cool for a minute, then use a thick dish towel and carefully remove them from the air fryer basket.

11. Use a sharp knife to run between the edge of the cake and the ramekins.

12. Carefully flip the cakes onto a serving plate.

Notes

A dusting of confectioners’ sugar, colored or chocolate sprinkles, chocolate cream, vanilla ice cream, fresh berries with chocolate shavings, peppermint candies or chocolate sauce can enhance presentation.

Use silicone baking cups if you do not have oven-safe ramekins.

Do not use an electric beater or electric mixer; this will take the air out of the batter and prevent the molten center.

Use a butter knife or a flat spatula if you prefer not to use a sharp knife.
